Rotini Pasta Salad
Ingredients
  • 1 lb Luigi Vitelli rotini
  • 
1 lb fresh cherry tomatoes
  • 1/2 cups black olives
  • 4/5 leaves fresh basil
  • 8 oz fresh Italian mozzarella di bufala
  • 3 tbsp extra virgin olive oil
  • salt to taste
Directions

Cook the pasta al dente. Meanwhile, in a large bowl halve the cherry tomatoes, and add the olives, chopped basil and mozzarella di bufala in pieces. When the pasta is ready, drain, rinse it with cold water and add it to the large bowl. Add the extra virgin olive oil and mix it.
