Chickpea Salad

A colorful vegetarian dish served either as a lunch item or side dish Mediterranean style!


  • 28 oz Luigi Vitelli Chickpeas, rinsed and drained
  • 1 pc Small red onion, finely chopped
  • 1 pc Small red bell pepper, finely chopped
  • 3 pc Ribs of celery with leafy tops
  • 1 pc Clove of garlic
  • 1/2 tsp Crushed red pepper flakes
  • 2 tbsp Rosemary, finely chopped
  • 2 tbsp Red wine vinegar
  • 3 tbsp Extra virgin olive oil
  • 1 pc Salt
  • 1 pc Fresh ground black pepper


Combine chick peas with onions, peppers, celery, garlic, red pepper flakes and rosemary in a medium bowl. Dress salad with vinegar and oil, salt and pepper.
